Terroirs vinified separately in oak barrels (70%) and acacia (30%), with the volume and age of the container chosen based on the structure of the juice (barrels 228 l to 500 l). Average barrel of 400 liters – 3 wines. Long fermentation in troglodyte cellars without intervention for 1 year. No yeast added and light sulfiting if needed at racking. Blending in tank before the harvest, followed by 8 additional months of aging.
