Champagne Goulin-Roualet Ad Vitam Aeternam Premier Cru Extra Brut NV
Champagne house Goulin-Roualet was founded through the marriage of M. Goulin and Mile Roualet, as well as their respective family vineyards, drawing on three generations of viticulture.
The winery prides itself on its commitment to quality and environmental sustainability. Their vineyards host the three primary Champagne grape varieties, allowing them to produce a diverse range of cuvées, mainly in the commune of Sacy and the two villages which surround it as well as a plot at "Mont-Benoît" in Villers-aux-Noeuds. They practice grassing and shallow plowing to preserve the structure of the soil and the life within it. They use sexual confusion: this bio-technical technique
disrupts the coming together of male and female butterflies. The number of caterpillars is therefore reduced as well as the associated damage to the plant, all without the use of insecticides. Additionally, rather than removing or burning discarded vine shoots, they grind them to re-incorporate them into the soil while nourishing it. These are just a few examples of their commitment to the environment. Goulin-Roualet was awarded sustainable certification by Terra Vitis in 2018.

Inspired by the Spanish Soléra technique, the Ad Vitam Aeternam cuvée is made up of wines from a first harvest (2018), which are rejuvenated each year with wines from the new harvest. The aim of the method is to impart the spirit of its elders to the young wine. In short, the meeting of passion and wisdom... The wines and champagnes that result from this method are of great complexity and richness. Rare and intense vintages, they generally combine maturity and freshness.
