Cutter Cascadia 'Ashes to Ashes' Dolcetto 2023

Michael Garofola, one man show at Cutter Cascadia, likes to say he’s “just another somm (sommelier) making wine”.  But much more than a sommelier and a winemaker, he wants to work with unique under-the-radar varietals outside the Willamette Valley and make them in an Old World style, and insists on directly managing every row of grapes that he buys (he does not own any land). He sources fruit from what he calls micro-leases, where he is present from pruning to harvest and manages each block in accordance to the rhythm of the season and how he feels the best way to express the vintage through the medium of wine.
