Severine Bourrier, together with her husband Philippe own and operate the Chateau de l’Ou in France’s Rousillon region. Named “L’Ou” or “egg” due to the oval shape of the property, this little Chateau and it’s owners have pushed forward both the reputation and quality of biodynamic winemaking in the region. Severine studied viticulture in Bordeaux, but moved to the Roussillon after meeting her husband Philippe at a wine fair. She makes wines of incredible complexity masked by a friendly and easy-drinking exterior. More black fruits, graphite, smoked meat, and violet notes emerge from the 2020 Côtes Catalanes Infiniment De L'Ou Syrah, a beautifully textured, ripe, sexy Syrah with ripe tannins, outstanding overall balance, and a great finish. I love its purity, balance, and texture, and it will easily keep for 7-8 years.
