Château Pierre-Bise Crémant de Loire 2021
Critic Jancis Robinson has called Claude Papin, the owner/winemaker at Château Pierre-Bise "one of the most talented wine growers in this part of the world, a true vine technician."
It was in 1959, at the age of 50, that Pierre Papin acquired Château Pierre-Bise. In 1974 his son Claude decides to return to settle on the 9 ha of origin that he will gradually expand, particularly in the late 80s with the recovery of his father-in-law’s vineyards on Rochefort, Chaume and Quarts-de -Chaume. A new stage is reached in 1992 with the integration of Clos de Coulaine which will bring an additional appellation to the property: Savennières. Finally, it is with the arrival of the last generation, Christophe in 1997, and René in 2001, that the vineyard will reach its current area of 50 ha with the acquisition of parcels including Savennières Roche aux Moines.
Production notes
The grapes are harvested at the green grain - young seed stages with a potential harvest grade of 12 ° 5 - 13 ° 5. A very slow pressing optimizes the finesse and limpidity of the grape juice before fermentation. Grapes supplementing the cuvée are harvested on non-schistose soils in order to always limit the presence of bitters in the chenin. The juice is then filtered to retain the Savennières personality in the cuvée. After a slow fermentation, the wine is stopped cold when 25gr of sugar per liter remains. A slight aging on the fine lees completes the vinification before the filtration of the batch and the start of the bottoms of the 2nd alcoholic fermentation, that of the bottle. Once the natural 25gr transformed, the pressure rose to 6 bar in the bottle.
