Baldovar Cañada París 2019

Cerro Negro is a red wine produced by Bodega Baldovar 923 and made with the Mencía variety in the DO Valencia. 

Baldovar 923 is a winery located in Alpuente (Valencia), a village high in the mountains whose mission is to recover the grape varieties from the mountains of Valencia by respecting the lunar cycle while being committed to organic farming and practicing minimal intervention, both in the vineyard and in the cellar. 

Cerro Negro comes from a plot at an altitude of 980 metres; 20 year old vines planted in bush-style and trellis-trained, which are cultivated manually and combining organic and biodynamic practices in order to maintain the biodiversity of the soils as much as possible. The harvest is carried out manually into boxes and selecting the bunches. 

In the winery the grapes undergo a second selection and are then destemmed and pressed. Cerro Negro is then macerated and fermented with the skins and with native yeasts at a controlled temperature. 33% of the wine is aged in French oak barrels for 4 months. The rest spends 9 months in stainless steel tanks. 

Cerro Negro is a high-altitude wine that preserves the freshness and minerality of the mountains.
