This Sancerre by Rimbault is a classic example of Loire Valley terroir. Chalky minerality from the Silex clay soil and racy acidity from the cool climate are everything I expect from this appellation. The Sauvignon Blanc grape can grow just about anywhere, but in the Loire Valley in the vineyards of Rimbault's one-man operation it takes on very specific, delicious qualities. Classic pairings include Chèvre cheese and triple crème Brie. Philippe Raimbault is a one-man show and a tiny producer of wines from Sancerre. This Sauvignon Blanc is a classic with racy minerals and white fruits dominating the aromas.
