Unico Zelo Jade & Jasper 2022
Origami is as Unico as a rosé can be - a blend of our 3 key regions, some beautiful vineyards, in our house style: fresh, vibrant and bone dry.
Brendan and Laura Carter of Unico Zelo apply an intuitive ap- proach to their wines, making them in natural in all sense of the term. They secure fruit parcels that match the varietal to the soil and climate to region. Nero D’Avola and Fiano from the hot dry Riverland and Nebbiolo from the blue slate soils of Polish Hill in the Clare Valley. Laura, chief winemaker and her husband, Brendan, are incredibly passionate about the soil and produce in Australia. It’s their intent to showcase products to the rest of the world that embrace Australian native ingredients and pay homage to the indigenous custodianship who maintained the land for thousands of years. They seek Australian identity in the products they craft, and their hope is that these Australian stories can one-day be heard on a global scale. Unico Zelo is part of the “New Aus- tralia” movement focusing on alternative varietals, sustainability, natural yeast, vegan friendly.
After playing with some of our Polish Hill River Sangiovese gener- ally destined for Truffle Hound– we, at last, have become enam- ored! We’ve then backed it up with some Old Vine Grenache from the Riverland that we’ve admired from afar for many years, finally taking the plunge for rosé, then lifted with a bit of Adelaide Hills Pinot Gris that’s seen a lick of skin contact for that copper hue. In short, this is as Unico as a rosé can be– a blend of our 3 key regions, some beautiful vineyards, in our house style: fresh, vibrant and bone dry.
Full of white peach blossoms, honeydew and lemon, all covered in a generous splash of Grannysmith Apple. This continues onto an electric palate, lifted by a rich fruit-sweetness, and sparked to life with a crispy acidity.
24 hours skin contact, wild ferment, natural malolatic fermentation. 100% aging in stainless steel tanks.
